Fassoulada


greek countryside soup.
2 tbls oil
1 large onion, chopped
4 gloves garlic, or one elephant garlic, minced
1 sweet potato, diced
2 tbls fresh thyme or 1.5 tsp dried
6 cups veg stock
1 can italian white romano beans, cannellini or navy beans
1 small green bell, seeded & diced
1 small red bell, seeded & diced
1/4 cup organic tomato paste
3 tbls fresh lemon juice
salt & pepper to taste
garnish with fresh feta cheese!
~ saute aromatics in oil until translucent... 10 min.
~ add potato with the thyme, saute 5 more minutes
~ add stock & cover, simmer until potatos are done, 15 min.
~ stir in beans, bell peppers & tomato paste
~ then lemon juice & salt/pepper
~ add fresh spinach if you'd like :)
